MEATLESS VEGAN "BULGOGI"!

I lived in a neighborhood with a lot of Korean restaurants and supermarkets and one of the dishes I enjoyed eating was "bulgogi"! I never imagined I'd be making it vegan! And I’m excited to bring you this meatless Vegan “Bulgogi” recipe!

Here’s the thing. Making bulgogi taste like bulgogi is all about the seasoning. You can use the same exact marinade and work with JACKFRUITS or your vegan meat substitute of choice. So that’s exactly what I did.

This Vegan “Bulgogi” will make for a hearty lunch or dinner, and the best part is, it packs plant protein just like the original thing would!

-WHAT'S IN THIS VEGAN "BULGOGI"?-❤️🕺🏻

Using two tins of cut jackfruit, I had to give the quintessential Korean dish - Bulgogi, a go! Jackfruit has a very stringy and meaty texture which works amazingly in normally ‘meaty’ dishes. Then it was all about getting the marinade right! The marinade is very simple, it’s known for its sweet tangs and saltiness from soy sauce. Enjoy the recipe below~!

What you will need:

300g jackfruit, drained

¼ cup (4tbsp) of soy sauce

3 tbsp agave syrup

½ tbsp sesame oil

1 ½ tsp ground garlic

¼ tsp white pepper

The marinade→(In a bowl), soy sauce, agave, sesame oil, garlic, and pepper. Mix well.

To make this marinade oil-free, you can remove the sesame oil but it will similarly change the taste significantly. It is one of the few oils I love to add to recipes for flavor because it’s really a flavor you cannot replicate without!

In another bowl, use your hands to break down the jackfruit into fine pieces/strands.

Pour over the marinade and let sit for 10-20 minutes to absorb the flavor.

Heat a pan to medium-high and cook jackfruit for 5-10 minutes, continually mixing until all liquid has evaporated/soaked in.

Take off heat and serve as desired! I served it on some white rice, greens, and kimchi. I sprinkled some sesame seeds and hemp seeds as a finishing touch! I used "NAVITAS organics" Organic Hemp Seeds and they are Non-GMO, gluten-free, kosher, and vegan :)

Fun Fact: Hemp seeds are one of many plant-based superfoods.

  • plant protein

  • balanced omega fatty acids

  • gently hulled seeds

Another fun fact: NAVITAS is Latin for "energy"!
